processhead We need a side by side …wel by side where we do hotdogs 3 ways, with natural, collagen and no casing. I have not made a skinless sausage in a while but I don’t remember a rubbery texture to it. Maybe I just don’t remember it well enough. While I agree that pallet appeal is vital I just don’t remember the skinless as a negative, will revisit when I have had some again!
