mecord the whole meat block usually uses about 40 oz of water, so if you are just making 5 pounds, I would start with about 20%, or about 8 oz of filtered water or other delightful liquid of choice. Of course, as Jon says, you have to make sure it is covered too. A vacuum tumbler really helps with that, but so does a five minuet marinator (don’t just marinate the meat for five minutes though) & the ratios will come out pretty close.
