has anyone ever tried or thought of just taking bratwurst seasoning and instead of making patties or the normal brat link and making something smaller like a hot dog size
medeling32 I have done it with 26mm cellulose before just to test the casings and it has worked well. It will all depend on how you want to cook it on what you add and how much you mix it. If you want it to have a hot dog like consistency then follow the Hot Dog if you want to make more of a brat in just a smaller casing then follow the Basic Bratwurst Processing and stuff it into smaller casings.
