I’m so glad I’m not scheduled to work for this. I enjoy these so much, but because of my crazy hours and shifts I am always watching the replay on YouTube. Just gotta hope I don’t get overtime… I’ve never said that before…

Find out what's going on at Walton's and Meatgistics this week. We will have a loose schedule for soon to be released videos, what we are working on long-term and maybe a few quick tips and tricks that are on our mind!
What Videos are being released soon?
The remaining videos on advanced meat processing equipment have been shot and edited, they will be released over the next few weeks.
Thai Pork - Will be released next week. This is one of my favorite recipes and I think the video came out really well with some beautiful shots of the finished product and the process.
What Projects are we looking ahead at?
Meatgistics University Deli Meat Advanced classes. We’ve already shot a few of these and done most of the testing we want to do. Videos should start being posted in a month or so.
What’s on our Mind?
Next Saturday at 11 am (CST) Austin and I will be doing our monthly livestream. We will announce the winner of this months giveaways, announce next months giveaway and sales and we will have some giveaways of Walton’s gear that you will have to be present to win! Also, we will have some sausages that we have made and will talk about what we think about the flavors. Basically, it is a Saturday and we want to eat lunch as we are on “air”!
Also, we have just added a way to add your Instagram and Twitter handles to your profiles. This will allow other people to check out your accounts and I will give those accounts credit when I post pictures you have posted to the Walton’s or Meatgistics Social Media accounts.

Homemade Mayonnaise raider2119 started a topic about smoking mayo and trying to increase the shelf stability of it. I talked to some people here and the one thing you would NOT want to do is to add cure to it, this type of cure is for meat processing, not just general food processing but it is an interesting post.

We have a new Meatgistics/Walton’s color and style T-shirt. This is the Burnt Orange color, both this and the Grey one are a new Dry Blend that is a blend of Cotton and Polyester. We have them in Small - 3 XL sizes.
