Surg It is really worth it, have made it quite a few times now. Have learned to trim the fat cap down a little if it is really thick. Sometimes it overwhelms. I just do that after I slice it into strips as it is easy. I also score the fat a bit.
This cook was last minute so just did on my gasser. You REALLY need to watch it as it will catch fire very easily. I did a reverse-reverse-sear (LOL) so seared first and then finished over low heat to prevent flares. Just seasoned with my own SPG mix I keep in a shaker. Just SP would be perfect as well.

processhead Now that is a meal for champions, probably homemade beer too, right. I see you have some of that Catahoula sauce to go with them. One of my favorite, if you can even find it around here these days. Very earthy tasting. Although, I think the Tabasco type sauce goes best with the fried crabs, etc.
