After curing, smoking and slicing I’m finally done with my bacon project…wet brined canadian bacon, dry brined buckboard bacon and dry brined belly bacon…the first picture shows how I put the bacon in the vac bags, custom made a vac bag that was small enough to fit inside the bags I was putting the bacon in and then cut a piece of cardboard to fit inside that bag and vac sealed it inside…loaded bacon on the can sealed cardboard, slid it inside the vac bag and slide the vac sealed cardboard back…worked like a charm !!!

We just had a little Bourbon Cherry Glazed Ham smoked with Cherry & Pecan wood after brining & deucing it up with sweet cherry juice.
Then we topped it all off with some homegrown collards a vino, I had to chase Mrs. Busch down the road to get some of those beans from her, & Andrew made one of his famous Whole Wheat Country Boules, & we washed it down with some homemade French Zinfandel wine. What’s for deesert now? I think I will make some of Uncle Crock’s Best No Bake Cookies.
