John Belvedere Good looking corned beef. I remember when my daughter cooked her first one, She called me and said "It’s been cooking for 3 hours now and it’s still pink, what am I doing wrong? I laughed and told her it’s probably done, it’s a cured product like ham and will stay pink.

Finished up the Pastrami late last night, 10 hours on the smoke, then covered for 4 hours in the smoker, then into the fridge overnight to cool and sliced this morning.

I’ve been making corned beef and pastrami for a few years now. I’ve dialed in the salt and spice profile that I and my family like. So in answer to your question it tasted great.
