Idaho Smokey I have to agree with the smoked Jarlsberg. My favorite is smoked Muenster. I also smoke a lot of Colby to give as gifts to people that don’t appreciate a good sharp/xtra-sharp cheddar. Monterey Jack also smokes up pretty good. I ended up smoking 83 lbs. of cheese this year. Finished up on March 22nd.

macsinsac First, I love that we get to see the grill being used to such an extent! Also, you ground up tri-tip and Italian sausage (was it already loose) to make meatballs? I’ve never made meatballs from already made sausage but now Im pretty sure i will be!

I’m all for adding Chorizo to any kind of meat! I love that stuff and I can imagine how good it would be with meatballs!

Jonathon I almost picked up some ground lamb but at $8.99/lb…no way. Hopefully I have some buried in the freezer!

Jonathon I’m finding another use for a batch that I made with a picnic instead of a butt. Too much connective tissue for the coarse grind I used & I didn’t want to trash it, so meatballs it is. Second round doing it 2 lbs at a time.

macsinsac I try to make even portions as often as possible for diet purposes. I’ll use a scale or scoop often. Meatballs and sausages are super easy to keep track of and ration calories that way!
