everyone has heard of xmass in July I decided to have a thanksgiving in June, smoking a turkey with all the trimmings this weekend. I thought it would be a good way to make room in the freezer for sausage!

craigrice There is never really a bad time for smoking anything is there? Turkey never lasts long in my house but I do believe I have two drumsticks hanging out somewhere in my freezer, I might just have to find them tonight!

Jonathon I’ve got a few that I’ve already smoked in the freezer. I used the ‘Disney’ turkey leg recipe found online. They are good after crisping on the grill after smoking but they do really well in something like a pot of beans in place of ham hocks!

Jonathon come to think of it have 2 turkey legs in the freezer as well I will smoke them as well I will have about 13 people just the family a normal cookout for me!

Jonathon This is off topic, but for poultry, if you inject butter (think Butterball Turkeys) into the bird, do you need to, or want to, inject sodium phosphate too? I’ve been contemplating that.

KansasDad Butterball does use a brine that includes sodium phosphates but no actual butter. I would suggest rubbing the bird with softened butter on top and under loosened skin prior to roasting. This is a good time to add fresh sage, thyme and rosemary as well.

KansasDad Like Joe Hell said i wouldn’t recommend injecting butter directly. If you were looking to add a butter flavor then the Butter Flavored Seasoning is a good one to inject. For most of the injectable marinades, you don’t need to add additional sodium phosphate as it will already be present in the necessary quantities but if you were making a homemade marinade I would suggest sodium phosphate for sure.
