Tex-Mex Snack Sticks - Cheese or No Cheese?

Hello, I’m thinking of using the Tex-Mex Snack Stick Seasoning for my next 25# batch. Does anybody have experience with adding cheese to this seasoning? If so what type of cheese would you recommend, or is it better with out? Mine will be all beef sticks.

Bought some ghost pepper last fall. Still haven’t tried it yet. IT SOUNDS SCARY. lol -
I’m sure any cheese would be fine. I just haven’t tried the Tex-Mex seasoning to know what kind of punch it packs. Not sure if I should try and balance it out with a mellow cheese or give it some extra kick. I’m thinking since I’m using all beef I may go with the hot pepper cheese for the 1st go around

Ghost pepper cheese is like taking a bite of a med. hot jalapeno, I mean just one little bite of the cheese so be gently. I find it quite nice as your eating a couple bites of sausage then get a little kick…I seem to remember about a cup to 10# of meat but a cup and 1/2 would get a kick every bite… YUM

PaulGrant Yes, if you like cheese with other flavors you will like it with tex-mex. That and the willies are the two that I would always recommend Cheddar with, I love our ghost pepper but it can be over powering in my opinion and tex-mex already has enough flavor!
