Tomahawks on the PK grill/smoker

I picked up two 3lb tomahawk ribeyes from sam’s before i left town this last weekend to head down to cimarron national grasslands for opening day. I reversed seared the steaks. Smoked until internal was a little over 90 degrees. I then wrapped the steaks in some butcher paper and set to the side while i loaded up the PK with a fresh chimney of lump charcoal. Once the grill grates were around 635 i put the steaks back on and cooked until internal was 125. It was hard to let these big boys rest for ten minutes but well worth it. -
Darkfish89 Gorgeous steaks! Today at the butcher shop the guys are going to cut the pork equivalent of the tomahawk…they plan to call them ‘Hatchet’ cut. I’ll be having one tonight for sure!

Great looking steaks. you should have stopped by The Ole Butcher Shop and said Hi to Randy, great guy. My memory of the grasslands are “craploads” of Yucca’s and no water

Darkfish89 Those are some insanely good looking steaks, I almost beleive you grilled them but I am betting it was a huntng buddy. Now post the pic of the Jerusalem Cricket and scare everyone!

Darkfish89 EARTH BABY!!! aka Jerusalem Cricket. Those are one of the freakiest creatures on the planet. We would find one or two a year behind Martin Archery when I was there. Creepy as hell.

Joe Hell They were everywhere since its been a wet year. it is always something different when i go to the grasslands this year it was these bugs, last year it was giant crickets that had armor to the tooth and spikes on them. War crickets lol. At least i didn’t see any snakes

Darkfish89 That explains why I don’t see them often. People assume that being from Washington that it rains all of the time here…not in Walla Walla. Our summer is long, hot and dry. We will go months without a drop of rain. This year we have only had 1 or 2 days days hitting 100. Normally that would be 3-4 weeks straight of upper 90’s/100+.
