Austin Jonathon Has Walton’s ever thought about putting out Podcasts?
One that I listen to is “Best Barbecue All Smoke No BS.” I was listening to it today, and they mentions that Certified Angus Beef had just rolled out a Podcast called “Meat Speak.” I haven’t listened to it yet, but the topics look pretty intriguing, the ones that caught my eye were, “The Short Rib” , “Burgers, Burgers, Burgers”, and the “The Science behind Dry-Aging.”

Jonathon How about some seasonal driven cooking, like now is a good time to dehydrate stuff-working on dehydrating some sumac right now, canning stuff like meats, butchering big game.
I think it would be fun to have some of the regulars on too. I feel like I know these folks and respect their opinions!

I’d say anything from smoking/grilling to canning, in short anything food related. Maybe bring in special guests like celebrity cooks, food scientists etc. With fall/winter arriving maybe have an entire podcats on soup/chili/stews. I’m sure you could have a whole podcast on if chili should have beans in it or not.
On a side not, I listened to the CAB Podcast on Dry Aging this morning and they had a lot good information on dry aging, and does and don’t of it. One thing I learned that I didn’t know is that you can order online specific mold cultures to use for dry aging.

Tex_77 We were planning on having guests and I think some of them should be some pretty cool ones. Yes the “good” mold is almost essential even with a commercial style drying cabinet. For anyone who doesn’t know it basically outcompetes the bad or harmful mold so it prevents it from growing.
Parksider We actually had Nick Hoffman from Nick’s Wild Ride in here yesterday and shot some segments with him while we made some product. We are hoping to do a lot more with him and one of the things he knows very well is field butchering big game. He comes back to Wichita from time to time so we will line him up as a guest and talk about that for sure!

Tex_77 It’s begun, we are just doing a few things to get it published! We will have a schedule of not quite weekly and they will average around an hour or so. Hopefully we will have a release date really soon!

He’s a huge Weston guy, a few years ago they showed us a list of people they sponsored and sai something like “yeah, let us know if you want to create something with any of these people” and he was on the list and then when I said obviously I’d love to work with him they laughed at me and said “yeah, not him” and so began my quest for vengeance! Obviously kidding, I’ve been testing new things out here all day and my brain is a little fried!
