How to Make Andouille Sausage

Chef The sodium Erythorbate is a powerful cure accelerator, it works with the nitrite, it does not replace it. Sure gel is a binder that is optional though recommended on cured sausages. To convert this to a dry-cured product you’d need a starter culture and some sort of cabinet or container where you can control the temperature and humidity.

I have been making Andouille sausage for over a decade, lived in South Louisiana for close to 30 years, and have never seen shrimp added to an Andouille sausage. Please explain!

lcash74 We’ve made a ton of Andouille so we just tried this and thought it was worth bringing to the masses! I know AdamCA was heavily against me trying this but he enjoyed it!

lcash74 That was the same thing I said when he mentioned it, you don’t put shrimp in Andouille. If you want to do that make Boudin or something else.

Jonathon I received my order of Andouille seasoning today. The ingredients list sodium erythorbate as an incident. Can I safely divide this seasoning for a smaller batch or is it meant to be used in one batch? You said that it only takes a very small amount of sodium erythorbate for cure acceleration. I’m worried about the sodium erythorbate having settled in higher concentrations in parts of the bag. Is this a concern?

wdaly Did you buy the 100 lb bag? Does the # on a bag end in a 2? Like 90002? The one that ends in 00220 shouldn’t have any sodium erythorbate in it. If you got the one that ends in 2 that means it is enough to do 100 lb. Normally, when Excalibur adds an ingredient like that to the seasoning they do it for flavoring or coloring reasons. Sodium Erythorbate does absolutely assist in color. I am checking with Excalibur now, when are you planning on making it?

Jonathon I won’t use is seasoning 729009037601 until I hear back from you. I made a batch today with Marianski’s recipe. Plan on smoking it tomorrow, so I’ll be good for awhile.

Jonathon Sorry, wrong number. The bag number is 0390002. It is the 100# bag with 0.50%. In hindsight I should have ordered the smaller bag.

wdaly Okay, so yes, that is the 100 lb unit, meaning it will make 100 lb of andouile. The good news is the amount of Sodium Erythorbate in there is NOT enough to activate the cure, it is for color development, so you are good to break it into batches! Thanks to our wonderful Commercial Sales guys for knowing this cause it was going to be at least until Monday when we heard back from Excalibur, but this has happened before. Enjoy!
