What Projects are we looking ahead at?
New section to Meatgistics University! We are working on adding an entirely new section to Meatgistics University “Wild Game” that will be all about making products with different proteins. We plan on doing just about every type of sausage you can think of out of deer and then some with goose, some with pheasant, hopefully, some moose and other large animals as well. If we do a video on Venison Snack Sticks we will still do a video for Pheasant Snack Sticks so anyone who wants direct instructions on different proteins can get that!

Jambalay Bratwurst Seasoning is a new seasoning that has a unique usage statement “Usage: 1 lb of seasoning to 6.25 lbs of ground fully cooked ham and 18.75 lbs of pork, poultry or seafood. Use 3 lbs full cooked long grain rice. (Cook 1 lb of long grain rice with 2 lbs of chicken stock). Use 12 oz of water. Mix and stuff into 32-35 mm natural casing and link.”
