bobfrapples I would suggest 70/30 at the least and up to 50/50 when using venison. For seasoning Hatch Green Chili Flavored Brat will provide some heat and includes garlic in its ingredients.

I’m making jerky from ground venison using a jerky shooter. How do I know I’ve mixed the meat and seasonings long enough?

GlennT I haven’t made restructured jerky but the process will be the similar to snack sticks though you don’t need to go that far. You can mix by hand until the point where it just starts to go ‘stringy’. If you grab a clump and it sticks to your palm when turn your hand over you should be fine.
