I just made 4 racks of Jerky in my 30" Masterbuilt on Sunday. I used a marinade using some oriental sauces from the fridge. Today, I’m making 3 lbs of brats-I’m bored and just trying to keep busy. Here are my suggestions for your next event-hope I win something! Randy.

IVERYAN I like the idea of doing one of the new ones. Buffalo Wing Jerky would fit that and I could do a half/half jerky and snack sticks there so it would be everyone getting a small package of jerky and a small package of snack sticks. I REALLY want to make snack sticks with the buffalo wing and add some dry ranch dressing and see what happens. Not sure that’s the best thing to test out if I am sending it out to people though!

Ring Bologna is high on my list and I am going to make a batch in the next couple of weeks, Have a package of Excaliber mix, and am trying to find what to add to it to give it more of the flavor of Troyers Trail bologna from Ohio.

Jonathon I would definitely be interested in how the Buffalo Wing flavor profile works with snack sticks. This made me think of another question for you.----- Have you ever tried making any kind of cured sausage out of chicken meat? The Buffalo Wing flavor made me wonder about using it in a chicken meat snack stick. :anguished_face: :anguished_face:

Okay I have pork butts and some beef, its not perfect for the jerky but good enough. So, I am going to make some Buffalo Wing Jerky and some snack sticks. All winners will get a package of both and half (or so) of the snack sticks will be with additional dry ranch dressing and half without.
Next, we will do the ring bologna and then Landjaeger and then we will come back and do the garlic and pepper jerky.
IVERYAN yup, I just made cured sausage with chicken (and pork fat) with Hatch Green Chili. It was really good, great flavor, I used 10% more seasoning per lb of meat since it is a fresh seasoning and doesn’t necessarily have the correct salt content for a cured sausage and because it was chicken.
