    Plan to do a double smoked ham along with a honey sugar glaze mashed potatoes with brown ham gravy and green bean casserole.

    I did some smoked deviled eggs a couple weeks ago-really tasty but not the prettiest eggs on the table. The smoke turns the white part a slight brownish-green color and there were smoker grate marks on them. But, they were really good. The wife cooks the eggs (from my chickens) in her instapot (the only way she does them now) and peels them. I put them in the smoker for about an hour with light smoke. If you want I’ll have her tell me the recipe for the rest of her deviled eggs. I also put about half a dozen smoked eggs in my 6 year old pickling jar. It’s like my sourdough starter-keep feeding it!

    Tex_77 Well, nothing special for my Deviled Eggs, I like to keep em simple & good, the way Mom did. We do kick em up a notch though & just put a little heat to them (Cayenne). I will twice smoke a few hams & try to keep it more healthy this year with a Pineapple Bourbon Glaze, Fresh Green Beans, Asparagus, Cauliflower, maybe a little immature Broccoli. I hope I can find me a good Cocoanut cake since Mom isn’t around anymore to make those & my wife & I just cannot match it. We will keep it simple!

    Randyman Now that sounds interesting, smoked pickled eggs. We used to have so many eggs that we had pickle a lot of them & still gave away a whole lot. That is when we found that, keep your seat belt fastened, some folks do not like homegrown chicken eggs. That was mind boggling to me, pardon me for saying so.

    Randyman I like fairly heavy smoke and had better luck cold smoking the deviled eggs after preparing them

    Tex_77 All i know is I bought Red Potatoes yesterday for my wife to do that part! My job is the Ham! Im a little concerned about the Green Bean casserole as im the only one in the house with a normal diet. My son cant have dairy and my wife cant have dairy or gluten. I dont have high hopes for food without those items lol
    I do plan to keep the glaze as a dipping sauce as well. Thats by far the best part of honey glazed hams!

    Tex_77 I don’t have any specific plans for a meal but I’m sure I’ll come up with something. My pops turns 70 on Saturday and we had planned a trip to Seattle to party with his brother and sister but that will obviously need to be postponed.

    We have a small rack of lamb that I’ll do, and then we’ll put in some sausage and dig out whatever anyone else wants from the freezer (there’s a heck of a lot in there). Sides will be green beans, some potatoes, probably some broccoli or Brussels sprouts, and I’m going to bake a loaf or two of bread (probably ciabatta and rye).

    My Dad goes crazy if he stops moving for more than 10 minutes, so he’s delivering boiled shrimp to whole family! LOL

    My wife mixes a DEL-Dixi relish( a family owned unit out of
    Fort Worth ) you can usually fine it in the supermarket,it 's a jalapeno ,mustard relish mix with the yellow egg filling, gives it a mild kick, mmmmm
