Yes as you mentioned you’d need to brine it to add moisture to the meat. But I would imagine after a few hours on smoke you could wrap that bird and get that real “fall off the bone” you are looking for while retaining a lot of moisture. I’d even go as far as maybe putting in a foil pan and add a little chicken stock to it. I bet that would come out pretty darn good.

Brian Schneider They are not designed to sear. They only time I hit over 500 degrees is when my firepot went up in flames from the temp probe going bad. To much heat in the pot will push the flame up the auger shaft.

I think the bottom rack is designed to drop down closer to the firepot for searing. Like has been said pellet grilla aren’t really designed to sear. Put some grill grates on it and i bet you’ll get the sear you’re looking for.

Drseibert I tried and they could barely speak English. And they tried telling me I needed to buy a new thermocouple but that is not the case and I chalk that up to the language barrier. Ended up hanging up frustrated after a 40 min wait to speak to someone and then when they did pick up she would ask me a question then put me on hold for 5 min over and over. After 2hrs I just gave up and went on with my day.

That the way they have become. They used to be a really good company when they were in Wilsonville, Oregon. You can’t even get replacement parts for the older models anymore. I buy from Stanbroil to replace what I need for my Texas Elite.

Drseibert Stanbroil is a company that make replacement parts for the Traeger. I have gotten my auger motor, blower motor, temp probe, heat element and upgrade my control panel with parts from them. Cheaper than Traeger and made in the same place.
