detter22 I do it all the time. I vacuum seal it after I wrap it in freezer paper. I freeze it because I’ll either use it for pastrami or corned beef since I can’t use the whole brisket at once most of the time.

You can do as you like, but always keep in mind that it’s still raw.
Personally, I would rather cook it just to have it all done, but I can see freezing them if you’re saving up for a large cook.

detter22 Even with the cure, you want to make sure to rinse it before you put it in your roaster and keep the temperature low. I pull mine out of the freezer, rinse them pepper them and put them on the smoker for 8-10 hrs. then into the oven cover for another 8-10 hours for my pastrami. Mine are all home cured.
