Venison Mango Habanero Summer Sausage?

Anyone have a recipe for this or any experience with it. Waltons video made it with regular pork and suggested no ECA due to taste. They do recommend ECA with venison or wild game. Any help for a noob would be appreciated.

Jason Smith I use smoked meat stabilizer with my summer sausage and snack sticks. It doesn’t leave the twang like ECA does. It lets you enjoy the seasoning that you picked. But that is just my opinion. Hope this helps you and good luck.

Ok thanks. What you did is what they suggested on meatgistics video but i wasn’t that was for venison. I’ll roll with that.

Jason Smith yes I use with venison and it comes out great. Good luck. I never tried the mango habanero before I think it would be too much heat for me and the family.

Jason Smith So, we got a lot of pushback internally, especially from our commercial sales guys on that call! I still want more heat and sweet from that flavor combo but a little acid seems to be pretty popular as well. I don’t think you can go wrong really
