gus4416 kyle Mcjagger thx guys. I watched a ton of youtube and google hits, and there were some pretty crazy recipes. I bought all 5 kinds of pepperoni I could find at store, cut them up and kept tasting… the spices in this recipe seemed like what I was tasting mostly. More importantly is spidey had tried it a few times, so his experience was convincing.

We loved our pheasant snack sticks we did here https://meatgistics.waltonsinc.com/topic/1850/gamebird-gourment-pheasant-snack-sticks Did you add cheese? we’ve done a few batches and I found that I like the Willies with pork fat and cheddar the best out of what we have tried.

I ended up with two 12 1/2lb batches one was a pepperoni blend with 1lb of mozzarella added and the other “Cody’s” snack sticks with 1lb of pepper jack. Both were 70/30 pork butt. My favorite way to eat them birds either that or salmi also.

When I get back home I’ll look at the spice mix I used we thought it was phenomenal and the mozzarella was a good choice I think.

Just recalling as I’m home now. If anyone was interested it was Hi-Country pepperoni seasoning I used.
