Keeping Hi-Temp cheese

Getting my supplies ready to avoid the rush. Can I freeze hi-temp cheese? I bought enough to hopefully get me through season. I had some to mold one year trying to keep it a little too long and don’t want that to happen again. I know you can freeze other cheeses but didn’t know if it would cause any issues with hi-temp. Thanks

denny66 Yes you can freeze hi temp cheese and it will keep for at least 6 months. I’ve frozen it a year and it was still good

Freezing works great. In fact, it helps a lot with keeping things good and cold when mixing and stuffing. A day or two (or so) before you plan on using it, take the cheese out and bust it up to make sure that all the cubes are separated, and then put it back into the freezer before you’re ready to use it. There’s no need to thaw it out before mixing and stuffing if you do that.

TexLaw Yup! I’ve been told that this doesn’t prevent the cheese from smearing while mixing but I’ve been lied to before and I think this is one of those times! I freeze and add during the last few minutes of mixing to be safe

Jonathon I mixed frozen hi-temp ghost pepper cheese into my last batch of Summer sausage for a good 5 minutes (at least), and I had no smearing whatsoever.
