Ed Paone The Smokai looks like a good unit.
It is a similar design to the Smokin-it and the Smoke-Daddy.
I have seen a few home-made cold smoke generators that use an air pump and venturi principle to pull the smoke into the smoking chamber.
After 1 smoke cycle in the PK100 I will candy these up with cinnamon and sugar. Yum

Awesome. I gotta try that.
PapaSop . They came out great. I then took them and candied them with sugar and cinnamon. I think I prefer them with just a little apple wood smoke myself, but the family loves the candied ones.

Think I’d just like the smoke itself to start with. How long to smoke and are you using a top grade cashew? I see Sam’s sells large containers at a reasonable price. Was thinking apple or alder for smoke. Thanks.
I got these from Costco.
For just smoking here is what you do. Pour all your cashews from container into a mixing bowl. Melt around 2-3 tablespoons of butter. I used a heart healthy butter. Pour butter over the nuts and stir well trying to wet all sides of each cashew. I put them in the Pk100 and set temp for 100. Once that smoke ended as it reached temp. I raised it to 130 and let that smoke cycle run until it cycled off at temp. I stired them twice during the cycles.
That’s it. They were really good just like that. However. You need to let them dry for approximately 4 hours. Then you are good to go.
Applewood is what I used. I think total time exposed to the smoke is around 30-40 minutes is all.

Those look very similar to the ones Sam’s has. Thanks for the info. Actually thought you were cold smoking all these nuts. I have to try this, especially with cashews. One more question. Do you punch holes in the foil pan as well or just stir?
Yes, I used a Phillips screw driver to punch a bunch of holes in it. The warmer temps, kinda roast the butter to the nuts and the smoke adheres so much better.

Perfect. Thanks. Gonna try this once gun deer season is done here. Was just thinking about pistachios as well… But usually get the ones still in shell. May not work as well.
