Hotdogs will not fat out if properly emulsified. They should be ground a minimum of 3 times (twice through your smallest plate). For best results, finish in a food processor before stuffing.
Ranch snack stick question.
Going to makes some ranch snack sticks, I noticed on the bag of seasoning that it says not to add an cultures. Would adding hi temp cheese be considered adding cultures.

flymark I believe the cultures that is being used is cultures used to assist in making dried cured sausage. Hi temp cheese is fine in cured snack sticks and sausages.
