Sure Cure in Willies

Is the sure cure mixed in with the Willies seasoning or should there be a packet of sure cure in the bag of seasoning?

keend0 should be a seperate packet, not inside bag of season but with it in the box it was shipped in

All stuffed and on smoker. I did not add sure cure so would it be safe to cook at 175 until 160 internal temp versus stepping up temp slowly? Assume would be safe to eat, but probably will fat out and shrink up?

I got them to 160 within 3 hr and brought them up to 170. Basically a cooked pork and venison meat stick. Will try a little and see if I have any issues. If I get hershey squirts they will become dog food.

keend0 twilliams Snack sticks should cook fast enough it should be fine. If you took 12 hours to get them up to temp without sure cure, I’d be a lot more cautious and I probably wouldn’t eat them myself, but I’d say they are most likely just fine. However, you should treat them like a cooked brat or other meat though and they should be eaten within a week at least. You won’t be able to keep them for an extended length of time, unless you freeze them. Your shelf life will definitely be a lot less and they must stay at least refrigerated after cooking. If you got the temp up to 170 in under 3 hours, I’d probably feel good enough to give them a taste.

I should also say I make no guarantees. Without cure and an extended slow and low cook is always a potential for bad things, but I’d personally wager it is fine.
