Meat thermometer?

I use the meater. Each probe has 2 sensors built in. The product sensor and the ambient temp sensor. Very happy with it. Not sure if it meets your criteris though for multi channels. They make a 4 sensor pack

Hog Pen I would definitely go with a Fireboard, 6 probes and can run a fan.

Hi Waltons sells the meater single probe unit. Not sure if they sell the meater block (the 4 probe unit) yet. I also use the ThermoWorks brand. Initially had a bad probe but their customer service sent me a new probe right away. Since then it works good. Bought the meater to get additional temperature monitoring. Also meater works well with rotisserie.

Meater plus is my go to.

What have you guys used for meat thermometers, seem to keep going to hell… would like a multiple prong read out… what you got and where you get em?
THERMOWORKS!
I use the “Smoke” model and really like it. I have the original two-probe unit that is nearing 3 years of use. The other thermometers they offer are of similar quality I have the “POP” and “MK4” and would happily buy them again if they were stolen or were lost.
Thermoworks products are durable, high quality, and accurate. Catch one of their 20% off sales and thank me later!

I have had the Thermosorks MK4 (4 of them) for 10+years as I used them in my catering business. I kept one in each catering truck. They are not cheap ($75-$80 ea) so when I sold my business they were among some things I kept. The MK4 is also easily calibrated for accuracy.
I also have their SMOKE unit as it has the meat probe and the ambient probe as well as a unit that you can carry around (I wear it around my neck) with the SMOKE unit I also purchased the 12” meat probe for deep frying.
All of these units I purchased directly from Thermosorks
Oh and as mentioned, their customer service is outstanding to say the least
