    I’ve had a decent year in the marsh. I’d like to make some sausage or snack sticks with puddle ducks and geese. If I don’t grill them, I usually sneak them into summer sausage. I’d like to do something different this year. What is your favorite sausage or snack stick seasoning for ducks and geese?

    Zupe I have never made snack sticks, but goose breast makes great jerky.

    There’s a ton of snack stick seasoning and there all great, I really like the bloodymary snack stick one . I mostly use goose breast for brats. Our favorite was cranberry swiss , the apple was great also . There all good just make sure you put in the fat . When doing goose brats or sticks I like about 70/30

    @zuper check out the Pepperoni Unit and make pepperoni sticks. We did this with goose and it was incredible, we also used 26mm cellulose casings for a skinless product and we just did this again with pheasant, both times it was killer. For an actual snack stick seasoning go with Willies and add high-temp cheddar cheese
