I agree with protein extraction and also not stuffing them tight enough. About the stuffing If I see that I made the mistake I just twist at different lengths just to pack them tighter

My wife and I are having whole hog processed in March. I would like to learn to make Brats and maybe meat sticks. Will I be able to make brats or other sausages from basic ground pork? Was thinking this may be a good time to learn new skill. We will have ground pork from this hog

mjdomey yes you can make brats from ground pork, you will need a stuffer of some sort to stuff the casings.

You could also make a nice breakfast sausage and just patty it or just have it ground (no stuffer needed). Just vacuum seal it into portions.DON’T FORGET ABOUT TEAM BLUE

mjdomey breakfast sausage is probably the simplest to make. Walton’s has a good selection of seasoning packages. You can adjust those to your personal preference. Other fresh style sausages are good place start and gain some experience and understanding. Plenty of folks here on the site and Walton’s willing to help you along.
