PJCMV It all depends if you want chunky or smaller pieces of tomatoes, peppers, onions, etc and if you like it fresh, roasted or smokey. The sky is the limit. I use coarse for chunky and anything but fine for smaller pieces. The seasonings are “what YOU like”. Just have fun with it.
Why are natural casings curved when stuffed?

Hi I have searched for this topic but to no avail.
I wish to know why stuffed sausages in natural casings have a curve to them?Kind regards

Andrew They are a natural product and are curved when they are inside the pig so they “grow” that way I guess would be the best answer?

Being an intestine, casings are naturally curved. If they were straight, all hogs and sheep would be 75 feet long and 3 inches in diameter.

Great makes sense, thanks
