OleSmokey If you are wanting to do chicken, use thighs absolutely. However, I recently found an old batch of Buffalo Wing Snack sticks I did out of beef with mozzarella cheese and OH MY GOD they are amazing.

I purchased this seasoning and was reading for small batches it wants 3 Tbls and 1 teaspoon per pound of meat. Does that sound accurate? It seems high to me but I have never done it.
Luebke1219 how hot do you want it? I just did 10 lbs with willies. added 2 tbls of dehydrated jalapenos, and not quite hot enough…
caryfr5 pulverized the jaleponos in a mini blender. almost a powder. Delicious tho!

Luebke1219 https://meatgistics.waltonsinc.com/topic/617/seasoning-conversion-chart-for-1-lb-and-5-lb-meat-batches 3 tbsp and 1 tsp (1.28 oz) for 1 lb of meat…man that does seem high…I am going to switch from Giggawat on something i was doing later today to Habanero Stick so I can open a bag and test that.
