Stuffer nozzle diameter

Hi everyone! I’m wanting to attempt to make venison sticks. My stuffer came with 16,22,32 and 38 mm. Tubes. The 16mm looks to small for sticks. And the 22 maybe a little large?if they are both ok to use. What size casing would I need for each? THANK YOU!

JohnnyR just after mixing if you meat block feels a bit stiff you can add more water. Should not need more that 2qts for a 25lb batch. Or 1qt for a 12.5lb batch

JohnnyR 16mm is going to be small enough for a 26mm casing but it is too big for snack sticks. 12mm will work with 19 or 21mm but I just checked to be sure and the 16mm will not allow you to use a 21mm casing, the tube is too big. Looks like the stuffer you bought isn’t designed for snack sticks?

Jonathon well dang, i better take my dial caliper home and see what size my tube is. 19mm casings are snug on mine but it works nicely. Doesnt allow the meat to work back between the outer tube and inner casing like you do with loose fitting casings. I split the full length casing tube in thirds instead of using the the entire length

I have a 16mm tube from Waltons and it is too big for 21mm sticks as well as cellulose for my bambi dogs. It does work but I cant put the casing over the tube without spooling it off the compressed case. Make sense?? Maybe this is how it is supposed to be done? basically like putting on a natural hog casing. Thread it on the tube, scrunch it rearward, thread on more, repeat, when tube is full of casing cut off, tie and stuff. I am not able to put the entire log onto the tube. My next order will have a smaller tube on it so I can do it the way I think it is supposed to be done. Slide tube on and stuff.

JohnnyR Jonathon i am absolutely sorry that i gave you wrong information on stuffing tube size. I measured mine with a dial calipers when i got home. My outer diameter is .500" which comes to 12.7mm outside diameter. And like i said in the previous post the 19mm is very snug, where i have to cut the full length casing tube into 3 sections to get it on in a light twisting motion but i prefer it that way. Again i apologize.

twilliams No worries man, there is no reason for you to have all the sizes of stuffing tubes memorized! Personally, I’d like to see everything redone and standardized to the point where a 19mm casing would fit on a 19mm tube. It just seems to make sense to me and I think would do away with a lot of confusion.

Ozgrams If I could fix that and the fact that the numbers on the dial of a slicer MEAN NOTHING then I would have lived a useful and purposeful life!

Jonathon , it’s a Hakka brothers stuffer. According to their website. It does say sticks in the description. They are saying 16mm is a 1/2 in tube. The deer sticks the processors here in north central illinois make. Basically are as big around as a hot dog. These are the size I’m wanting to make. . I’m just hoping I’m not confusing myself others saying deer sticks. But that’s what we call them here. I’m not wanting to make slim Jim style sticks. But bigger ones the size of hot dogs.
