If it is actually metal, a close inspection of the knife, plate, auger and housing should give clues on where it is coming from. Look at the friction points where surfaces make contact for signs of metal loss and wear. Don’t forget to check that back end of the auger where it enters the motor drive. There should be a plastic or brass bushing or washer there.
As mdseaside mentioned, you should be oiling the plate and knife with food grade oil. This is so when you start the grind they have some lubrication till the meat makes it through the auger and can act as a lubricant for the knife and auger.
Citric Acid

I was curious we were making summer sausage and bought your all’s summer sausage seasoning and encapsulated citric acid. We completely forgot the package of citric acid we bought was for all 100 lbs of stuff we were making and actually added it all to a 25 lb batch and then stuffed it. Will this cause any issues having that much citric acid?

Other than being overly sour and not really tasting like summer sausage, it probably wouldn’t hurt you to eat it.
We have all made mistakes following recipes. It really pays off to measure everything twice plus read and understand all directions. -
With cooking mistakes. Sometimes you can make the mistake more edible by putting it in another new dish as an ingredient. Think soups and stews. Dilution is the solution.

Unfortunately we were not even drinking. Now I have nothing to blame this on besides us not paying attention. I just hope it’s not so bad that you can’t even eat it. What do you all think?
