Yeah I’ve been doing sticks on my Pitts & Spitts Maverick 1250 pellet smoker but it only goes down to 180F. I ordered a PK 100 to fill that low temp niche my current grills/smokers don’t.
Drying excess fibrous casings to use later

I am doing a batch of summer sausage. After soaking and stuffing casings, I have two casings left over that weren’t needed. Can I hang them to dry and store them for use next time or do I need to throw them out?

Found another advantage of finishing my summer sausage sous vide. When I fall asleep in my recliner for 3 hours, it is still cooked perfect!

Yep. No problem. I always soak an extra two or three, just in case.

I had the same problem, so being very expensive to have them shipped and all from the north island, I dried it out and used them again just the other day for more salami, it is hang and doing good at this moment!
