John Belvedere They will vary in length considerably from my experience. Sometimes I’ll case 5 lbs, other time times twice that or more. Don’t fret…soak an estimated amount for your project and if you have leftover just saturate with plain/kosher salt (non-iodized) and vacuum seal then refrigerate for later use.
The variation in length is common for natural casings. The very short lengths on a tubed casings is unusual though. That sounds like someone was trying to clear out some defective inventory.
Sheep casings can be a little more fragile and subject to blowouts, but you soon learn regulate the fill rate while stuffing and minimize them.
Hog casing are pretty durable and do not break all that often, unless you really mishandle them.
