    Anyone got a pickled beet recipe? My uncle was the the one in our family that did the marvelous pickled beets. He has now passed on and no family member has it so, if you are willing, I’m all ears!

    When I go to my moms I can check her recipe, but here are 2 that I found in the Ball Blue Book. It is a great book to have. I think they still print them

    @dennyo The beet pickles come out really well. They are like German pickled beets.

    @dennyo Really All of them, I am a fan of The Office and pretty much turn it on weekly when it runs on Comedy Central.

    #DennyO The one I use is the same as what Kyle posted as Beet Pickles in the second picture. It comes out of the Ball Blue Book for canning. They come out really good, just like German style, you can add nutmeg to for a bit more flavor

    johnsbrewhouse anyone who cans should have the Ball blue book. Alot of good info. I have a couple of them. One of them was my grandma’s and is pretty used up but just cant bring myself to throw it. My parents bought me a new one after I moved out and started canning.

    kyle I have my mom’s and she bought me a new copy in 1994. I also have a Morton’s salt meat curing book as well.

    Cooked till lightly fork tender, peeled and sliced, added brine in the jar and water bath processed.

    Here’s how I made them,

    4 to 5 lbs Beets
    Trim stems and roots down to 1 inch and put beets in pot cover by an inch to boil. Heat for maybe 15 minutes till somewhat fork tender.

    In another pot stir in the following bring to a boil and simmer
    1-1/2 cup white sugar
    1 Tbsp pickling salt
    3 cups white vinegar
    1/8 cup whole cloves
    1/2 tsp cinnamon
    1 tsp allspice
    3 cups beet water (from cooking)

    Remove beets from water and trim, peel and slice top to bottom.

    Fill jars with beets and use a a filter or small screen to fill jars with the brine.
    Hot water bath for 10 min, turn off fire and let stand for 3 minutes then remove and let cool.
    After 24 hours remove bands and wipe clean and store.

    Yielded 6 pints
    I’m going to let them set 2 weeks before I open the first jar to see how they turn out. I’ve never made them before
