    Whole peeled beef knuckles are on sale at my wholesaler this week. Would this cut of meat make reasonable ground meat?

    Joe Hell any tips on this cut of meat?

    Chef More often referred to as sirloin tips. They are part of the round, so yes they would be go ground.

    Chef Still looking for the Dill green beans recipe for you too. Been a busy week with everything kind of hitting the fan and the wife having her carpal tunnel surgery done on her wrist. She is one handed for a week or so.

    Chef If you want a lean ground beef you would be good. Check out this article https://butchermagazine.com/beef-knuckle/ You could probably make some nice deli style roast beef with it.
