Snack sticks without ECA refrigerator time?

I am making some venison snack sticks but plan to not add any ECA. I seem to recall that you need to let sit in refrigerator for 12 hr. after stuffing and before smoking. Is that correct or was it 24 hr?

What Cabelas90 said. I use smoked meat stabilizer in a lot of the stuff I do because I don’t care for the tang of ECA. The Smoked Meat Stabilizer doesn’t impart any flavor.

TANG IS KING! But, if you dont like it Smoked Meat Stabilizer and if you have a very accurate scale then Sodium Erythorbate works as a cure accelerator as well and it imparts no tang.

Is there any advantage of using sodium erythorbate instead of smoked meat stabilizer?
