Are they edible - Snack Sticks from May 29?

So, realized I still have a few vac sealed packs of 100% 80/20 beef Willie’s Snack Sticks with hi-temp cheese in the fridge. They were cured/smoked and handled properly. Have been vac sealed in fridge ever since and packages look great - no loss of seal, etc.
Toss or eat (assuming they pass sniff test when opened)? Hate to waste if they are fine but don’t want to spend long weekend on/near toilet.

Jamieson22 Sniff test should be fine.
I have eaten cured vac packed sticks lost in the fridge for a year or more -

Stored as you described, they should be entirely safe to eat. Age gradually takes its toll on flavor, aroma, or texture first but you are only 90 days in.
I would go for it. -
Thanks to you both. Saw mentions of “freeze after a week” that had me worried. Will just open one tomorrow and hopefully you hear from me again;)

Jamieson22 my kids found a package of them in my shop fridge last week. They had been in there at least 2 months. I forgot I set them out. They were just like fresh thawed. You’ll be fine.

So I ate one a few hours ago and seemed fine. Moved from vac bag to ziploc just now and pick up the slightest hint of “funny” smell. Though not sure if it is in my head or real. They look just fine though this one end makes me wonder. Could be normal oxidation or…?
Plan to make a batch this weekend (100% pork butt) so thinking I’ll just toss the rest of these out. Is only 3lb and on go forward will do better job of freezing them as no reason to keep in fridge 3 months.
Thoughts?

Jamieson22 I had some thawed out for three weeks vac sealed that I forgot about. I threw them away as they say to treat it like any other meat since we don’t know what the PH and water activity levels are

Jamieson22 well if it didn’t pass the smell test, I would toss them. Better safe than sorry.

The color on that exposed end doesn’t look too great. Unless I was starving, if something doesn’t smell right, I would not eat it whether it was safe or not.

Jamieson22 I have had some in the freezer longer than 90 days and they were fine, not as good as fresh but a pleasant surprise when I found them.

You know, I ate one and all was fine. I think I was being super critical/cautious, especially knowing I was making a new batch a day after.
