    Some homemade polish sausage, think I’ve just about got my recipe perfected. Waltons ring bologna casings works excellent. I’ve added 2 large pans in the bottom of the smoker for added humidity and think it really helps.

    cdavis this was a homemade seasoning I’ve been tweaking to my liking.
    Salt
    Garlic
    Marjoram
    pepper
    Sugar
    Curing salt

    bubba_mcnabb The sausage looks great! Regarding the pictures; if you post without replying to someone you can go back to “edit”. At that point look at the far right icon above the dialogue box and you’ll see the picture icon. Click on it to load each picture. They will all be in a single post. Again your sausage looks amazing!
