Any mortadella fans??

I decided to make a ginormous mortadella and was wondering if we had other mortadella fans on the board.
I normally slice it deli style or slice a slab and fry it (like bologna) but my younger brother sent me a Tik Tok about someone smoking a bologna and was wondering if anyone have any experience smoking mortadella

That looks great. Love to eat it but have never made before.
I think of it as stepping up bologna to a more flavorful level.

It is definitely less in your face than traditional bologna. The pistachio and tellicherry peppercorn do add some fun flavors. I did make the mistake of omitting a couple of spices because I am not a fan of them but I think it was a mistake. I will have to tweak my recipe a little to be happy with it

I would definitely share the recipe if I was happy with the results, but I am not
As explained above I omitted a couple of spices and that was a mistake. It has a good texture, good addition of the pistachio and peppercorn, I should have added a few big chunks of back fat and should not have deleted the nutmeg
