ND Mike You can do it. Buckboard bacon is probably one of the easiest, & unfortunately that & Canadian is about all I can do because I can never find any bellies, much less bellies at a good price.

16 oz corn
16 oz red bell pepper chopped
1/2 purple onion chopped
1lb cheddar cheese shredded
9 oz chili cheese fritos
1/2 cup mayo
To keep the corn chips crispy you may want to add them in right before serving. -
