rticeiii I harvested many “goats “ in Eastern Colorado. I mostly made jerky, roasts, and stew meat. It really made a good Green Chile.

That is a nice speed goat! As long as you got it cooled down quickly the backstraps will be good cooked as steaks. The rest I would grind and make sausage with.

Besides Antelope that is how I have always heard of them being referred to. I mean they are the fastest land animal in North America.

Bob Stehlik What units did/do you hunt in CO? I’ve been putting in for the draw for the last few years and have been focusing around Alamosa. I believe units 81, 83 but I’ve been researching some other units on the eastern slope.

I burgered most of mine, make steaks from the back straps, cooked the tenders whole.

and Congrats on your goat! It is my favorite game meat that I’ve tried so far. I would take a goat steak over an elk steak, personally. Probably going to be in the minority on that one!
