Favorite way to prepare deer heart?
-
I’m asking the group for your favorite ways to eat deer heart. I am going to make sure I save deer hearts from now on unless we blow it up…which has been known to happen quite a bit. Lots of North Dakota kill shots from our hunting group.

I did find this video https://youtu.be/VmkK2261Nec which is pretty good on how to prepare the heart.

ND Mike I either clean out the center and stuff and then bake or slice it across and dredge in seasoned flour and fry. Been eating it for over 40 years, like the heart but not the liver.

bocephus liver is ok once in a while but I have to be in the mood for it. I do like liver sausage though or some braunschwieger.

ND Mike I like to slice it about a 1/4in thick season and roll in flour then flash fry.

ND Mike I like beef liver with onions but I have never liked deer liver. I do like braunschwieger though.

bocephus I wonder how a liver sausage made with pork and deer liver would be?

ND Mike That might be ok with the proper seasoning.

I have one in the freezer, I have been wanting to make it like Steve Renellia makes his. Sliced thin fried in oil with onions.

Like bocephus I like it stuff, I use wild rice, fry it for appetizers. The liver we use to make liver sausage, I like to fry it up but I can eat only so much liver by myself, the sausage goes quicker.

+1 on the method used by bocephus and cdavis.
Deer heart is very good. We secretly served some to a friend and told him it was steak. He claimed he never ate organ meats, but he scarfed it down and had seconds.
I like deer liver and onions. Not much different than beef liver IMO, but somewhat different than pork liver.
We use deer liver with pork trim and pork fat to make braunschweiger with good results.
The gut pile gets a little smaller every year. lol -
+1 on HerbcoFood following the MeatEater crew on this one. There are numerous video’s of theirs where they prepare offal and organs.

fisherman43 processhead I believe that processhead has made liver sausage. However, I’m not sure if he posted the recipe. processheadprocesshead REGULAR CONTRIBUTORS Jun 20, 2021, 2:16 PM
