Forgot to add cure accelerator!

    Hey folks, today I made a batch of pheasant snack sticks and put them into the smoker about an hour ago. However I just realized I completely forgot to add in smoked meat stabilizer as I typically do. They have been in a 125° smoker for approximately 45 minutes at this point. At this point is there anything I can/should do to ensure a safe product? Thanks!

    at this point you will have to run with them but the cure did not have any time to work and the product will not be shelf stable , it will have a little from the smoke process and being cooked to lethality but I would not thaw more than you will eat with in a couple days when kept refrigerated

    nmac54 Continue your thermal processing and cook to 160 and they will be safe to eat. Not including a cure accelerator won’t ruin a product or make it inedible. Just as craigrice said, don’t treat them as shelf-stable and you’ll be fine. Still eat and enjoy them!
