Whew, this is a tough week, in more ways than one. I might have voted for some of the Honorable Mentions, some of those look very good. Right now I am going back & forth between The Pulled Pork Enchiladas & the Udon. The Enchiladas look fantastic & I am sure they taste good too because I have a recipe I wrote several years ago for basically the same exact thing. It is really good & makes good use of leftover pulled pork. I really like the way you did them & of course the presentation takes you to home base right away.
I think a lot of, well hopefully no blood, but perhaps some tears along the way & definitely some sweat, went into the Udon. It looks tasty & is out of the box for our group, no doubt about that. I like your prep, I like what you have in it, I like your final product. It looks good. I am going with the Udon. -
