FOr my hot Italian sausage I normally add 1g of Calabrian pepper powder and 1.5g of red pepper flakes. Hope this helps

50/50 venison and pork with jalapeño and cheese.
Temps got a little high right at the end put it didn’t effect it much. I got lucky and caught it quick enough. -

Looks great. I made a half batch of the habanero bbq summer sausage. I used the sure gel as a binder, and used cheddar cheese. On point!

YooperDog it does have some nice heat, but its not overpowering by any means. guys at worked loved it. Also, adding the high temp cheddar tamed the heat very well. great flavor.
