johnsbrewhouse thanks and think fat the processor uses could have extra salt too. I will try cutting my seasoning back

Dr_Pain coworkers said it’s the best flavor I have done yet, and I’ve done a lot of different flavors in the last 3 seasons.

Perhaps this would be a good candidate for the 5# sample packs that were talked about last month? Five 5# sample packs of different seasonings so customers could try other flavors without such a large commitment.

I must say I wasn’t too sure about buying this seasoning as it only comes in a big bag for 100lbs of meat. DO NOT let that shy you away from it. It’s a fantastic seasoning. It’s just an all around original flavor. Even has what seems to me as a tangyness without adding ECA. I recommend vacuum sealing the seasoning you don’t use right away. Should last a long time. I believe it would also be good as a summer sausage.
I am guessing this seasoning is marketed for commercial processors.
It’s too bad they don’t package it bags for 25 lb meat blocks.I really don’t like buying ingredients like spices and seasonings in quantities that large.
I work pretty hard at turning over my inventories of meat and ingredients since freshness is such a key part of making quality product.
Everything gets dated when I receive it so I know how long its been on the shelf/freezer.

twilliams When you said “it has an original flavor”, did you mean unique? Or is it more like a slim jim/pepperoni flavor profile that most people think of when they eat snack sticks? Btw, thanks for posting this, i love to hear different opinions on seasonings.

I am the same way. There is usually little in the product description for seasonings to know what you are getting.
Getting impressions from the folks that have tried them is a huge benefit for those of us who have not tried them yet,
I know spices and seasonings are subjective, but anything we learn about them is helpful.

IVERYAN original meaning typical beef sticks you can buy at other meat processors. Better than store bought or slim Jim’s. Hope that clarifies a bit better.
-
can you tell us what the # is on the package of the seasoning
-
craigrice 6lbs of seasoning in the bag which is good for 100 lbs of meat
