Lance Oh boy, now you have me thinking about the next big meal. I have lots of Red Beans, A good amount of Rice, Still have a few nice sausages left, but o Tripe. Do you grill your tripe first or how do you introduce it to the Red Beans & Rice?

calldoctoday I braise the tripe in beef broth with onions and jalapeño and garlic. I cook them until they are very tender and then add to the beans and rice.

Lance I make menudo which is tripe based, but I have never added it to my red beans and rice, you sure have me thinking. I normally add my homemade andouille, but I only have one package left, so maybe when I run out I’ll try the tripe, thanks for the idea.

mrobisr Now that’s some serious hang over medicine. I really like the hommed corn too. My family always liked it a lot, but Margaret’s family does not like it much at all. I guess it is another one of those love it hate it items.

Lance after 2 days of cleaning up snow with the snow blower a good helping of that would warm a body up !

craigrice We actually got about 5" of snow yesterday, store and businesses shut down and schools closed today. It is really strange the difference in NM and the northern states, that wouldn’t even have slowed people down up there.

bocephus Indeed, If we just get a little hint of freezing rain or anything down here, it is shut down city. I remember the first time I was on assignment a long, long time ago in Michigan during heavy blizzard season. I thought I would have the place to myself with 4WD & all my gear. Heck no, it was full steam ahead on the road & all as nothing shut down. Maybe a little during the below zero weather, but not really even then. I learned quick, had no choice.

craigrice I used to love those days when I was young, ran a snowblower, $5 a driveway and back then that was good money for a kid.
