Cutting up some pork butts this morning. I’ve got a full day of sausage making today. Everything from breakfast sausage to chorizo and German link and will finish with snack sticks.

Long but productive day. Tomorrow I get to run the smoke house. And start packaging all the chorizo.

Lance It looks like you have all the right tools to maximize productivity.
I was looking at your stuffer and wondering if you could share some pictures of it taken from a couple of angles.
Based on what is visible I don’t think I have not seen that style of stuffer before.

It’s a biro mini #32 mixer grinder.Nice piece equipment! How does it do with your sausage stuffing? A lot of basic grinders don’t do all that well with stuffing, but that’s not a basic grinder either.

processhead it does a great job. It’s a 3 horse 3 phase motor so it doesn’t bog down at all.
I add my meat meat chunks and add seasoning and put it in mix mode for a minute then shift it to grind mode and grind. Then I add meat back in and put on the stuffing horn and mix once more for a couple of minutes , shift back to grind and stuff.
The machine has a 60 lbs hopper and it will grind 60lbs per minute It will stuff 60lbs of 30-32mm casings in about 10 minutes.
