I agree his vids are good and I was following him until I caught him in error and he wasn’t man enough to admit it, so I have since moved on.

Buy the book “THE ART OF MAKING FERMENTED SAUSAGES” by Stanley and Adam Marianski.
You can hurt yourself or even possible kill yourself if you don’t follow some basic principles and this book lays it out in detail.
Another great read is “Great Sausage Recipes and Meat Curing” by Retek Kutas.
